One of our favourite activities to do at home is to bake. I have 3 boys, Jack 12, Oliver 10 and Arthur 8 and for as long as I can remember we have been getting together in the kitchen. From making standard sponge cakes to something a little more tricky like Roast Dinners. It’s a great way to help develop essential skills too, especially maths without it actually being like formal learning. From counting ingredients to weighing them, to working out temperatures and timings. There are literally so many elements to baking and cooking and it can be enjoyed by all ages.
My day job is within the Early Years and cooking is something that I am a big advocate for. Children love getting involved in the kitchen and the best part is being able to taste the outcome afterwards. I thought as part of the 31 Days of Activities during May I would share a quick and easy biscuit recipe. It’s a basic recipe using store cupboard ingredients, however this is where you can get creative, you can include an added ingredient, from chocolate chunks, to fruit, to sauces such as caramel.
Once you have perfected the recipe it will become one you will want to come back to time and time again.
Time
Prep – around 10 minutes plus 1 hour to chill
Baking – 12-14 minutes
How many does it make? – between 20-30 biscuits depending on size.
Ingredients
- 200g Unsalted softened butter,
- 200g white caster sugar,
- 1 medium egg, lightly beaten,
- 400g Plain flour (you will need a little bit extra for dusting).
Equipment needed
- Large mixing bowl
- Electric Whisk/Hand Whisk/Stand Mixer
- Baking tray
- Parchment paper
- Cookie cutters (any shape)
- Knife (palette knife would be best but any knife will do)
- Cling film/wax wraps
- Cooling Rack
How to make the biscuits
- First you will need to mix the butter and sugar together, you can either use a stand mixer/electric whisks or a handheld whisk. Younger children would love to use a hand whisk to mix it altogether and it helps to strengthen the wrist muscles. You are looking for a creamy mixture,
- Add the egg into the mixture and continue to mix until it is all combined. Then add the flour! At this point you can also add an extra ingredients too,
- Once combined wrap the mixture and place in the fridge for about an hour. This will make rolling and cutting a little easier, however I have been known to miss this step,
- Pre-heat the oven to 190degrees, if you have a fan assisted oven then you can use 170degree or gas mark 5,
- Lightly flour the work surface and roll out the dough to about 3/4mm thick. You can use cookie cutters to fit any theme, or big tip, if you don’t have one, you can use any cup too,
- Line the baking trays with parchment paper and place the biscuits onto the tray, pop into the oven for around 12-14mins or until they are golden brown,
- Use the palette knife to transfer onto a cooling rack, and
- Leave them to cool and then enjoy!
