This apple crumble recipe is one of our family favourites, made with real natural ingredients; it is usually demolished shortly after leaving the oven. With four kids and a thriving ice cream business which operates from our home, it’s pretty busy here but never boring.

I started my ice cream business about eight years ago when my children were aged just two, four, six and eight. I was actually running a catering company at the time, and we were catering for hundreds of events throughout the year. As you can imagine we weren’t getting to spend as much time with the kids as we would have liked, as our evenings were filled with food preparation and the weekends were taken up by the events.

It was actually feedback from guests about our honeycomb ice cream that triggered the idea to sell it. I make the honeycomb and ice cream base myself from my own recipes and it’s a real show-stopper, in fact it has since won a Great Taste Three Star Award for truly exceptional flavour. It was a local farmshop owner who approached us to ask about selling the ice cream that started Simply Ice Cream.

It wasn’t quite as easy as that description makes it sound! All profits had to be reinvested after every sale to help us to grow the business organically, so I didn’t take a salary for four years. My husband and I continued to work at our day jobs, do the school and nursery run, make time for the kids, finish homework, do bath time, read stories and around 9pm we would start making the ice cream. Often we would be up until the small hours potting and casing orders for delivery the next day.

For years we worked 18 hours days but I don’t regret a moment of it. We are so proud of what we created. The Simply Ice Cream range now comprises over 30 flavours and has been awarded around 33 Great Taste Award stars in total, including 2 three-star awards and several two-star awards. It is all still made the traditional way by hand, in small batches using only natural and local (where possible) ingredients.

Apple Crumble With Simply’s Delicious Cinnamon Ice Cream

Ingredients

Ingredients for the fruit filling:

  • 5 large Cooking apples
  • 1/2 lemon
  • Pinch of cinnamon
  • 1 cup raisins
  • 1 cup sweet cider

Ingredients for the Crumble Topping:

  • 200 g Porridge oats
  • 200 g Butter
  • 200 g Demerara sugar
  • 300 g Plain flour
  • pinch of Cinnamon
  • pinch of Ginger

Instructions

For the fruit filling:

  1. Peel and chop the cooking apples into even chunks and place in a large bowl and squeeze lemon juice over the fruit. Add the cinnamon, raisins and the sweet cider and stir together. Place all the ingredients in a deep oven proof dish

For the Crumble topping:

  1. Mix together the porridge oats, butter, sugar, flour, cinnamon and ginger until mix resembles a crumb mix and spread evenly on the top of the apple mix.
  2. Cook in oven at 180° until the apple mix starts to bubble up through the topping and the crumble turns a golden brown approximately 45 mins check frequently.

Serve with:
