How to make a seed-free flapjack

There are some upgrades and options for these savory flapjacks. If your family wants to adjust this recipe to best suit your specific needs or desires, then consider replacing the pumpkin and sunflower seeds with a half-cup baked quinoa.

Other options could be to replace fresh, chopped herbs and different vegetables to your savory flapjacks. For instance, you can use about 6 florets of cauliflower finely chopped instead of carrots in your vegetarian flapjacks.

Ingredients

  • 4 tbsp pumpkin seeds
  • 4 tbsp sunflower seeds
  • 1 cup/80g oats
  • 1 carrot, peeled and grated
  • ½ courgette, grated
  • 1 cup/120g grated cheese
  • (or 4 tbsp of nutritional
  • yeast)
  • 2 eggs
  • 4 tbsp olive oil

Instructions

    1. Preheat the oven to 180˚C/160˚C fan/360˚F and line an 18cm
    2. Line your baking tin with parchment paper.
    3. Mill your pumpkin and sunflower seeds in a blender until they're fine in texture.
    4. Mix the oats, carrot, courgette, milled seeds and cheese together in a separate bowl.
    5. Grab another bowl and mix your eggs, then add the blended eggs to the above ingredients.
    6. Add in the olive oil and mix until ingredients are evenly blended together.
    7. Pour the mixture into your baking tin, being sure to press the mixture down firmly.
    8. Bake for approximately 30 minutes or until the flapjacks are set and golden.
    9. Remove from the oven and let cool for a few minutes.
    10. Use a knife to the cut savory flapjacks into 16-20 flapjack servings.

Notes

You can leave your pumpkin and sunflower seeds whole for older children if you'd like.

Allow any leftover flapjacks to cool completely before attempting to remove them from your baking tin.
