When we talk about recipes on KiddyCharts, sometimes it seems as though we are bragging about how amazing we are at cooking. However, we have to shout from the rooftops about just how addictive this colourful, scrumptious sweet potato dip is, and it is so easy to make as well. You little ones will love it.
The main ingredient in this dish and the overriding flavour comes from the low-fat sweet potato. A rich source of nutrients, including fibre, vitamin A and vitamin C, this starchy root vegetable also packs a punch with its sweet earthy flavour. Because of the high fibre content, sweet potatoes are fantastic for your digestive system, potentially lowering the risk of developing bowel cancer, too.
This versatile vegetable also contains a high amount of beta-carotene, which helps to promote healthy vision. Your body will convert this antioxidant into vitamin A, necessary for a healthy immune system, which will increase your chances of fighting off illness.
Tahini is mainly associated with hummus, but it works so well in this sweet potato dip, bringing a slightly nutty flavour to the table. This paste also adds a wealth of beneficial fats along with a healthy amount of vitamins and minerals to this simple but tasty dip.
While you can simply use it as a dip for veggies (carrots, peppers and mange tout are our favourites), flatbreads, tortillas or breadsticks, you could also present it as a side dish or as an accompaniment for a starter (chicken skewers, for example) or main meal (such as steak or fish).
As parents, we often concern ourselves with how we can get our little cherubs to be more accepting of fruits (usually a little easier) and vegetables as a staple in their diet. It often feels like a battle, with most of the individual fights lost. So, when you first discovered that kids would devour this dip (albeit along with mini breadsticks to begin with), you might feel like celebrating. The fact that all of the adults in the family will love this dip too is even better.
How to make sweet potato dip
Preparation Time: 5 minutes
Cooking Time: 10 minutes
Serves: 1 adult & 1 toddler
Ingredients
- 1 large sweet potato
- 2 tbsp tahini
- ½ tsp minced garlic
- ½ tsp paprika
- ½ tsp ground cumin
- ¼ lemon
- ½ tsp olive oil (or avocado oil)
Method
- Peel the sweet potato and then cube – don’t worry if they’re even or not. Then either steam or boil until soft (about 5-10 minutes depending on the size of the cubes).
- Add the sweet potato, a squeeze of lemon juice and the rest of the ingredients to a blender and blend until smooth and creamy. If you are not a fan of its thick consistency, simply add a tablespoon or two of your favourite milk.
- Serve alongside a selection of vegetables for dipping as a snack or as part of a main meal.
This tasty dip can be stored in an airtight container in the fridge for up to 5 days.
Mix it up a bit by sprinkling on some cayenne pepper – this will likely work better for adults, unless the kids like it a bit more spicey!
