Easy bake banana loaf #31daysofactivities

I love to cook, and if I do say so myself, I’m pretty good at a wide variety of dishes. But baking? Not so much. I’m not the kind of person who can bake cakes or cookies or scones. For some reason, no matter how closely I follow the recipe, I just can’t get it right.

Hopefully, my kids will come to appreciate my cooking in the future, but right now, it’s all about baking. I love spending time in the kitchen with them. That’s why this banana loaf recipe is so fantastic. It’s pretty hard to get it wrong. You simply tip everything into a bowl, stir it together, and put it in the oven.

It’s really versatile too. You can add or reduce the amount of sugar depending on your sweet tooth or add any other soft fruit you have in the house such as blueberries, raspberries, or strawberries for an extra bit of flavour.

It’s a huge hit with adults and kids alike in our house. We don’t even wait for it to cool down before we start digging in. The kids enjoy it as a snack and I love it with a nice cup of tea. Baking as a family is a great way to spend time together. Not only will the kids be learning important cooking skills, but you’ll also get something yummy at the end too.

Tip: As I’ve already said, I’m no baker and don’t have all the kit, but I’ve found this measuring jug (affiliate link) from KitchenCraft perfect for measuring out all of the ingredients easily.

My five-year-old helps me cook this and it’s really easy for him to use too. Plus, if you’re following an American recipe that uses cups rather than grams, you can use this without having to convert anything.

I like to add some rolled oats to the mixture for a bit of texture.

Easy Bake Banana Loaf

Total Time 45 minutes

Ingredients

  • 2 large or 3 small bananas mashed (the riper the better)
  • 150 ml vegetable oil
  • 2 eggs (whisked)
  • 300ml vanilla yoghurt (or plain yoghurt with a few drops of vanilla essence)
  • 175g brown sugar
  • 250g self-raising flour
  • 120 grams porridge or rolled oats (optional)
  • 1 tsp ground cinnamon
  • ½ tsp nutmeg

Instructions

Preheat the oven to 180C/160C Fan/Gas Mark 4

Line a loaf tin with some greaseproof paper

It’s not called easy banana loaf for nothing. Simply combine all of the ingredients in a mixing bowl and stir together until the mixture comes together and there are no lumps of anything but the mashed banana.

Pour the mixture into the loaf tin and top off with some more oats.

The top of your banana loaf should look a lovely golden brown colour and have a slight crunch. Insert a sharp knife into the middle of the loaf, if it comes out clean, then it’s ready

Lift it out onto a cooling rack and get ready to enjoy. It can be enjoyed on its own or served with a little thick yoghurt.

Bake for 40 – 50 minutes.

The top of your banana loaf should look a lovely golden brown colour and have a slight crunch. Insert a sharp knife into the middle of the loaf, if it comes out clean, then it’s ready.

Lift it out onto a cooling rack and get ready to enjoy. It can be enjoyed on its own or served with a little thick yoghurt.

So there you have it, the perfect recipe to cook with kids. You can keep it fresh by placing it in an airtight Tupperware container (if it lasts that long).
